Today's Wine Tidbit: Champagne Only sparkling wine from the region of Champagne in France can be called Champagne. All other sparkling wine must be referred to by other names. In order to be a Champagne, the producer of the wine must have also followed other rules and regulations. An important one is the method of producing the bubbles - known as secondary fermentation. In the traditional method, used by Champagne makers, once the first step has been completed (that is, the still wine has been produced), the wine is bottled and topped of with a mixture of yeast and sugar (Liqueur de Tirage) and the bottle is capped. A secondary fermentation then occurs within the bottle creating carbon dioxide, and thereby carbonating the wine. The primary grapes used in Champagne are chardonnay, pinot noir, and pinot meunier. A rosé must have some quantity of pinot noir or pinot meunier (the red grapes) in it.
