GEORGETOWN: 1789 has Reopened With a Your Choice Tasting Menu

On September 6th, after a 12-week closure for roof repairs, 1789 Restaurant reopened with a new menu. The menu, designed by Executive Chef Samuel Kim, allows the guest to create their own tasting menu of four, five or six courses, priced at $85, $97 and $109 respectively. 

The Georgetown building that houses 1789 Restaurant, The Tombs and F.Scott’s closed on June 11th, 2016 for necessary roof repairs. While closed, Clyde’s Restaurant Group invested in a new French top range for 1789 Restaurant.

“We’re excited about the new flat top stove,” says Chef Samuel Kim “it opens up technical and creative opportunities for the kitchen and a perfect time for us to offer a prix fixe menu. The tasting menus will allow our guests to experience more dishes at a great value.”

The Tasting Menu has some special items that include;

Uni with roasted lobster, salsify, fennel, oyster mushrooms, lobster foam
Beef Tartare with spiced red wine, caviar, poached quail egg, tendon puff, cured egg yolk and shallots
Stracceti with duck confit, shishito peppers, pancetta and Parmigiano-Reggiano
Arctic Char with zucchini, squash blossom, pickled cucumber, cardamom nage
Duck with rainbow cauliflower, couscous, pearl barley, Meyer lemon, foie gras truffle, walnuts, wild
huckleberries
Rib-eye loin with mille-feuille potato, mushroom puree, bone marrow foam, baby carrots

Dessert options include Maple Flan with walnut financier, ginger toffee tuile, bruleed spiced pluot, and pear-reisling sorbet as well as a Chocolate Pave dark chocolate mousse, amaretti cookie, espresso caramel sauce, salted ganache and vanilla mascarpone ice cream.
